So you have arrived at that pivotal question...What do I want my wedding cake to look like?
Sometimes you just know, but what if you are on the fence about what you like? My best advice is to go with your heart. Talk with your finance and if you're a wacky couple who loves to have fun and you really don't want a traditional cake, HAVE SOMETHING THAT IS YOU!
Often I sit down with a bride and groom and they have come in thinking that they had to be traditional, because that is what is expected, and twenty minutes later we are talking about a topsy turvy cake, or a baseball theme, or under the sea.
Do not be afraid to make the cake unique; make it you. Traditional is fine as well! If you want that elegant wedding white cake, have it as you would like.
It is important to be happy with what you choose. If you sit down for a consult and you are not 100% satisfied with the design as discussed, let your cake artist know! Once the design is made, your cake maker will not know you are unhappy or if you have reservations unless you tell them.
Feel free to call them up and make a change (as long as it's not the day before the wedding!) If you call up a week before and ask for five dozen red gum paste roses on your cake, do not be surprised when they say no. Now if you ask well before, we are always happy to work with you. It is a memorable day and the cake has a special meaning, so make it you.
What if you want traditional and wacky?
I have two solutions for you. First, simply have two smaller cakes that meet your ideas of wacky and fun, with a traditional cake as well. A grooms cake does this well if you want just
something special for him.
The second idea is incorporate elegance, along with some details that make it a little funky and wacky! How do you do this? Why not have a white cake with some elegant white details and ribbons, perhaps some gum paste or real flowers, and make each tier just a little topsy turvy. Fun, something a little different, maybe a splash of color, and still you.
At the end of the day just remember, this is your chance to have the wedding cake of your dreams! Make it you, make it fun or keep it traditional! It's simply your choice.

Traditional or Wacky?? Hmmm...Well....I do KNOW ... you DO know a tone more about cake than me... and when you do the voodoo ... with the batter ...no matter the design in mind ... the cake and the taste will all be fine!
That being said, I like traditional balanced layers but the flavor I like to be more "wacky" (as in "personalized"
